Ingredients
Scale
- 1 lb Italian sausage
- 4 cups chicken broth
- 3 cups water
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 cups kale, chopped
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Brown sausage in a pot over medium heat. Remove and set aside.
- Heat olive oil in the same pot. Sauté onion and garlic until soft.
- Add chicken broth and water. Bring to a boil.
- Add potatoes and cook until tender, about 15 minutes.
- Stir in cooked sausage, kale, and heavy cream. Simmer for 5 minutes.
- Season with salt and pepper. Serve hot.
Notes
- Use spicy sausage for extra heat.
- Substitute kale with spinach if preferred.
- Store leftovers in the fridge for up to 3 days.
