- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 2 chicken breasts, cooked and diced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/4 cup chopped cilantro
- 1 lime, juiced
Instructions
- Cook rice according to package instructions.
- Heat olive oil in a pan over medium heat.
- Add diced chicken and season with chili powder, cumin, garlic powder, paprika, salt, and pepper.
- Cook chicken until browned and fully cooked.
- In a bowl, combine rice, black beans, corn, and cooked chicken.
- Squeeze lime juice over the bowl and garnish with cilantro.
- Serve warm.

- Substitute quinoa for rice if preferred.
