Ingredients

Instructions

  1. Cook quinoa according to package instructions.
  2. Rinse and drain black beans, then heat in a pan with cumin and chili powder.
  3. Mix cooked quinoa, seasoned black beans, corn, and diced bell pepper in a bowl.
  4. Top with avocado slices and chopped cilantro.
  5. Squeeze lime juice over the bowl and season with salt and pepper.
