Irresistible Quinoa and Avocado Salad in 30 Minutes

A healthy and refreshing quinoa and avocado salad packed with nutrients and flavor.

Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa in water for 15 minutes or until tender.
  3. Let quinoa cool slightly.
  4. In a bowl, combine quinoa, avocado, cherry tomatoes, red onion, and cilantro.
  5. Drizzle with olive oil and lemon juice.
  6. Season with salt and pepper.
  7. Toss gently and serve.

Notes

  • Store leftovers in an airtight container for up to 2 days.
  • Add lime juice for extra tanginess.
  • Substitute parsley if cilantro is not preferred.
