Ingredients

- 1 cup quinoa
- 2 cups water
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- Cook quinoa in water for 15 minutes or until tender.
- Let quinoa cool slightly.
- In a bowl, combine quinoa, avocado, cherry tomatoes, red onion, and cilantro.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper.
- Toss gently and serve.
Notes
- Store leftovers in an airtight container for up to 2 days.
- Add lime juice for extra tanginess.
- Substitute parsley if cilantro is not preferred.
