- 2 lbs russet potatoes, peeled and cubed

- 4 cups chicken broth

- 4 slices bacon, cooked and crumbled

- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place potatoes, onion, and chicken broth in your crock pot.
- Cover and cook on low for 6 hours.
- Mash potatoes slightly to thicken the soup.
- Stir in heavy cream, cheese, salt, and pepper.
- Cover and cook for another 30 minutes.
- Garnish with bacon and chives before serving.
Notes
- Use an immersion blender for a smoother texture.
- Add more broth if you prefer a thinner soup.
- Store leftovers in an airtight container for up to 3 days.
