- 1 lb pork tenderloin
- 2 cups Brussels sprouts, halved
- 1 large apple, sliced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried thyme
Instructions
- Preheat oven to 400°F.
- Season pork tenderloin with salt, pepper, garlic powder, and thyme.
- Toss Brussels sprouts and apple slices with olive oil and a pinch of salt.
- Place pork in the center of a baking sheet and arrange apples and Brussels sprouts around it.
- Roast for 25-30 minutes or until pork reaches 145°F internally.
- Let pork rest for 5 minutes before slicing.
- Serve warm.
