Ingredients

- 1 lb mixed seafood (shrimp, crab, and scallops)
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Cook the seafood in boiling water for 3-5 minutes until tender. Drain and let cool.
- In a large bowl, combine the seafood, cherry tomatoes, cucumber, red onion, and parsley.
- Drizzle with olive oil and lemon juice. Season with salt and pepper.
- Toss gently to mix all ingredients.
- Chill in the refrigerator for 30 minutes before serving.
