Ingredients

- 1 cup mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 1/4 cup shredded carrots
- 1/4 cup cooked quinoa
- 1/4 cup chickpeas, drained and rinsed
- 2 tbsp feta cheese, crumbled
- 2 tbsp balsamic vinaigrette
Instructions
- Add the balsamic vinaigrette to the bottom of the mason jar.
- Layer chickpeas, quinoa, and shredded carrots next.
- Add cucumber and cherry tomatoes.
- Top with mixed greens and feta cheese.
- Seal the jar and refrigerate until ready to eat.
- Shake the jar before serving to mix the dressing.
Notes
- Keep dressing at the bottom to prevent sogginess.
- Use a wide-mouth jar for easy layering.
- Store in the fridge for up to 3 days.
