Ingredients

  • 1 tbsp lemon zest
  • 2 tbsp chopped fresh rosemary
  • 2 tbsp chopped fresh thyme
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 head cauliflower, cut into florets
  • 2 tbsp butter
  • 1/4 cup heavy cream
  • 1 clove garlic, roasted

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Rub lamb with olive oil, lemon zest, rosemary, thyme, minced garlic, salt, and pepper.
  3. Place lamb on a roasting rack and roast for 25-30 minutes for medium-rare.
  4. While lamb cooks, steam cauliflower florets until tender.
  5. Drain cauliflower and blend with butter, cream, and roasted garlic until smooth.
  6. Let lamb rest for 5 minutes before slicing.
  7. Serve lamb with mashed cauliflower.
