- 4 cups chopped kale

Instructions
- Wash and dry the kale, then chop it into bite-sized pieces.
- In a large bowl, massage the kale with olive oil for 2 minutes to soften.
- Add cranberries, almonds, and feta cheese to the bowl.
- In a small bowl, whisk together lemon juice, honey, salt, and pepper.
- Drizzle the dressing over the salad and toss gently.
- Serve immediately or refrigerate for up to 2 hours.

- Use walnuts or pecans instead of almonds for variation.
