- 1/2 cup unsalted butter, softened
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme, chopped
- 1 tsp salt

- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Mix butter, garlic, parsley, thyme, salt, and pepper in a bowl.
- Cut a pocket into each chicken fillet.
- Stuff each pocket with herb butter.
- Heat olive oil in a skillet over medium-high heat.
- Sear chicken for 3 minutes per side.
- Transfer to oven and bake for 20 minutes.
- Let rest for 5 minutes before serving.

- Let butter soften at room temperature for easy mixing.
