Ingredients

- 1 whole chicken (about 3–4 lbs)
- 8 cups water
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
- 1 tbsp fresh parsley, chopped
Instructions
- Place the chicken in a large pot and add water.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the chicken and shred the meat.
- Add carrots, celery, onion, garlic, salt, pepper, and bay leaf to the pot.
- Simmer for 20 minutes until vegetables are tender.
- Return shredded chicken to the pot.
- Stir in fresh parsley before serving.
Notes
- Use leftover chicken for a quicker version.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
