- 1 whole chicken (3–4 lbs)
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon, halved
Instructions
- Preheat oven to 375°F (190°C).
- In a small bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper.
- Rub the mixture all over the chicken, including under the skin.
- Place lemon halves inside the chicken cavity.
- Roast for 1 hour 15 minutes, or until internal temperature reaches 165°F (75°C).
- Let rest for 10 minutes before carving.
Notes
- Pat the chicken dry before seasoning for crispier skin.
- Use a meat thermometer to ensure doneness.
- Leftovers can be stored in the fridge for up to 3 days.
