- 4 large onions, thinly sliced
- 4 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups beef broth
- 2 cups water
- 1/2 cup dry white wine
- 1 bay leaf
- 1 tsp thyme
- 1 baguette, sliced
- 1 1/2 cups Gruyère cheese, grated
Instructions
- Melt butter and olive oil in a large pot.
- Add onions, sugar, salt, and pepper. Cook until caramelized.
- Pour in wine and scrape browned bits from the pot.
- Add broth, water, bay leaf, and thyme. Simmer for 30 minutes.
- Toast baguette slices.
- Ladle soup into bowls, top with toasted bread and cheese.
- Broil until cheese melts.

- Use sweet onions for best flavor.
- Caramelizing onions takes time—don’t rush.
- Substitute vegetable broth for a vegetarian version.
