- 2 large eggs
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup shredded cheese
- 1/4 cup cooked black beans
- 1/4 cup cooked diced potatoes
- 1 large flour tortilla
- 1 tbsp butter or oil
- Salt and pepper to taste
Instructions
- Heat butter or oil in a pan over medium heat.
- Add diced onions and bell peppers, sauté until soft.
- Add cooked potatoes and black beans, stir until heated.
- Push the mixture to one side of the pan and crack eggs into the empty space.
- Scramble the eggs until fully cooked, then mix with the vegetables.
- Sprinkle shredded cheese over the mixture and let it melt slightly.
- Warm the tortilla in a separate pan or microwave.
- Spoon the filling onto the tortilla and roll it tightly.
- Serve immediately.
