Ingredients

- 2 lbs beef stew meat, cubed
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp flour
Instructions
- Place beef stew meat at the bottom of the crock pot.
- Add carrots, potatoes, onion, and garlic.
- Mix beef broth, tomato paste, thyme, rosemary, salt, and pepper in a bowl.
- Pour mixture over the meat and vegetables.
- Sprinkle flour on top and stir gently.
- Cover and cook on low for 8 hours or high for 4 hours.
- Serve hot.
Notes
- For thicker stew, add more flour.
- You can replace potatoes with sweet potatoes.
- Freeze leftovers for up to 3 months.
