- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 cup spinach, chopped
- 1/4 cup sun-dried tomatoes, sliced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper, then cook for 5-6 minutes per side until golden. Remove and set aside.
- In the same skillet, sauté garlic until fragrant.
- Add heavy cream, chicken broth, and Parmesan cheese. Stir until smooth.
- Mix in spinach and sun-dried tomatoes. Cook until spinach wilts.
- Return chicken to the skillet and simmer for 5 minutes.
- Sprinkle with Italian seasoning and serve hot.
