- 4 large potatoes, peeled and diced

- 4 cups vegetable broth

- 1/2 tsp black pepper
- 1/4 tsp thyme
- 1/4 cup chopped parsley
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic, cook until soft.
- Add potatoes, broth, salt, pepper, and thyme. Bring to a boil.
- Reduce heat, simmer for 20 minutes or until potatoes are tender.
- Blend half the soup for a creamy texture.
- Stir in milk and heat through.
- Garnish with parsley before serving.
Notes
- For a thicker soup, blend more of the potatoes.
- Add shredded cheese or bacon for extra flavor.
- Store leftovers in the fridge for up to 3 days.
