- 1 1/2 lbs ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 egg
- 1/2 cup chopped onion
- 1/4 cup ketchup
- 1 tsp salt
- 1/2 tsp black pepper
- 4 large potatoes
- 1/2 cup butter
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix ground beef, breadcrumbs, milk, egg, chopped onion, ketchup, salt, and pepper.
- Shape the mixture into a loaf and place it in a baking dish.
- Bake for 1 hour or until the internal temperature reaches 160°F (71°C).
- While the meatloaf is baking, peel and boil the potatoes until tender.
- Mash the potatoes with butter, milk, salt, and pepper until smooth.
- Serve the meatloaf with mashed potatoes on the side.
Notes
- You can add grated cheese to the mashed potatoes for extra flavor.
- Leftover meatloaf makes a great sandwich filling.
