Hearty Beef Stew Recipe: 5-Star Comfort in Every Bite

Ingredients

  • 2 lbs beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides, then remove from the pot.
  3. Sauté onions and garlic until softened.
  4. Add carrots and potatoes, cook for 5 minutes.
  5. Return the beef to the pot and add beef broth, tomato paste, thyme, rosemary, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  7. Season with salt and pepper.
  8. Remove bay leaf before serving.

Notes

  • For thicker stew, mix 1 tbsp flour with 2 tbsp water and stir into the stew.
  • Store leftovers in the fridge for up to 3 days.
