- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 corn tortillas
- 2 cups enchilada sauce
- 1 1/2 cups shredded cheese
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 350°F.
- Cook ground beef, onion, and garlic in a skillet until browned.
- Drain excess fat and stir in chili powder, cumin, salt, and pepper.
- Warm tortillas briefly to make them pliable.
- Fill each tortilla with beef mixture and roll up.
- Place rolled tortillas seam-side down in a baking dish.
- Pour enchilada sauce over the top and sprinkle with cheese.
- Bake for 20 minutes until cheese is melted.
- Garnish with cilantro before serving.
Notes
- Use flour tortillas if you prefer softer enchiladas.
- Add diced green chiles for extra flavor.
- Let enchiladas rest for 5 minutes before serving.
