Hearty Beef and Vegetable Soup in Just 45 Minutes

Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 can diced tomatoes (14 oz)
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 potatoes, diced
  • 1 cup green beans, trimmed and cut

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides, then remove from the pot.
  3. Add onion, carrots, and celery to the pot. Cook until softened.
  4. Stir in garlic and cook for 1 minute.
  5. Return beef to the pot. Add broth, tomatoes, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 45 minutes.
  7. Add potatoes and green beans. Simmer for another 20 minutes.
  8. Serve hot.

Notes

  • You can substitute beef stew meat with ground beef.
  • Add other vegetables like peas or corn if desired.
  • Store leftovers in an airtight container for up to 3 days.
