Ingredients

- 1 lb beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 can diced tomatoes (14 oz)
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 potatoes, diced
- 1 cup green beans, trimmed and cut
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides, then remove from the pot.
- Add onion, carrots, and celery to the pot. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Return beef to the pot. Add broth, tomatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add potatoes and green beans. Simmer for another 20 minutes.
- Serve hot.
Notes
- You can substitute beef stew meat with ground beef.
- Add other vegetables like peas or corn if desired.
- Store leftovers in an airtight container for up to 3 days.
