- 1 lb mixed seafood (shrimp, mussels, squid)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can diced tomatoes (14 oz)
- 4 cups fish or vegetable broth
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrot, and celery. Cook until softened.
- Stir in diced tomatoes and paprika. Cook for 2 minutes.
- Pour in the broth and bring to a simmer.
- Add the seafood and cook until done (about 5-7 minutes).
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
